Vanilla Hummus

Ingredients:

  • 1 can (15 ounces) chickpeas (garbanzo beans), drained and rinsed
  • 1/4 cup tahini (sesame seed paste)
  • 1/4 cup pure maple syrup
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Optional toppings: additional cinnamon, a drizzle of honey, or chopped nuts for garnish

Instructions:

  1. Prepare the chickpeas:

    • Drain and rinse the chickpeas thoroughly under cold water.
  2. Blend the ingredients:

    • In a food processor or blender, combine the chickpeas, tahini, maple syrup, lemon juice, vanilla extract, cinnamon, and a pinch of salt.
    • Blend the mixture until smooth and creamy, scraping down the sides of the bowl as needed. If the hummus is too thick, you can add a tablespoon or two of water to reach your desired consistency.
  3. Taste and adjust:

    • Taste the vanilla hummus and adjust the sweetness or seasoning if desired. You can add more maple syrup for sweetness or more lemon juice for acidity.
  4. Serve:

    • Transfer the vanilla hummus to a serving bowl.
    • If desired, sprinkle a little extra cinnamon on top or drizzle with honey for garnish.
    • Serve the vanilla hummus with sliced fruit, graham crackers, pretzels, or any other dippers of your choice.
  5. Storage:

    • Store any leftover vanilla hummus in an airtight container in the refrigerator for up to 4-5 days. Before serving leftovers, give it a quick stir, and adjust the consistency with a splash of water if needed.
