Ingredients:

  • 2 cups whole almonds
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar

Instructions:

  1. Toast the almonds:

    • Preheat your oven to 350°F (175°C).
    • Spread the almonds in a single layer on a baking sheet.
    • Toast the almonds in the preheated oven for 8-10 minutes, or until they are fragrant and lightly golden brown. Keep an eye on them to prevent burning.
  2. Make the sugar syrup:

    • In a small saucepan, combine the granulated sugar, water, vanilla extract, and salt.
    • Cook over medium heat, stirring constantly, until the sugar has completely dissolved and the mixture comes to a simmer.
  3. Coat the almonds:

    • Once the almonds are toasted, transfer them to a mixing bowl.
    • Pour the hot sugar syrup over the almonds and stir well to coat them evenly.
  4. Bake the almonds:

    • Spread the coated almonds in a single layer on the baking sheet lined with parchment paper or a silicone baking mat.
    • Bake in the preheated oven for 15-20 minutes, stirring occasionally, until the almonds are caramelized and the syrup has thickened.
  5. Cool the almonds:

    • Remove the baking sheet from the oven and let the almonds cool completely on the baking sheet. They will harden as they cool.
  6. Coat with powdered sugar:

    • Once the almonds are cool, transfer them to a large zip-top bag.
    • Add the powdered sugar to the bag and seal it tightly.
    • Shake the bag gently to coat the almonds evenly with the powdered sugar.
  7. Serve or store:

    • Serve the Frosted Vanilla Almonds as a delicious snack or treat.
    • Store any leftover almonds in an airtight container at room temperature for up to two weeks.
